Burgers by Josh – Pop-up Artist

Attempted to try this place while it was in North Sydney and the queue was just too long. This raised my expectations along with all the overwhelming positive reviews on the FBAS.

Spectrum Now was the only opportunity to try these burgers without major waiting time. On the day, the menu included Fat tony, Lisa Simpson and Lil Miss Piggy (pulled pork).

Fat Tony

Wagyu patty with havarti cheese, picked spanish onions, truffled mayo and rocket in a milk bun.

burgersbyjosh burgers spectrum now by josh fat tonyThe Fat Tony was a good burger. The pattie was cooked medium with a good thickness. I was not a fan of the texture: it was too spongy and I prefer a more meaty bite. The flavour of the meat itself was inconsistent, some of it tasted bloody and some was good. The meat also contained hard cartilage that made spitting them out unpleasant. The burger as a whole was good but not amazing. The mayo and cheese added some creamy sweetness to balance the bitter rocket bits. Overall, it went well together but at $15 I expected more.

Pretty much the vegetarian Fat Tony with slow roasted field mushrooms.

burgersbyjosh_burgers_spectrum_now_by_josh_lisa_simpsonOn the other hand the mushroom burger “Lisa Simpson” was similar flavour-wise to the Fat Tony but so much better because of there was no meat pattie. Trust me, that’s a tough thing to say for a meat-lover. It’s everything but bland, even slightly over-salted. The texture is a winner, soft but still having that mushroom texture we all love.

Conclusion

The burgers were average. The standard of what a great burger is going up everyday. Before getting creative with the toppings, combinations, sauces and condiments, the foundation – the beef pattie itself needs some fine tuning. The true value of these burgers are not more that $10 a piece. So paying a 50% premium even though it’s a festival, makes Burgers by Josh overpriced.

Would I go again?

No. Wouldn’t go out of my way.
